The celery plant (Apium graveolens) is an herbaceous, biennial member of the parsley family (Apiaceae) that is typically cultivated as an annual vegetable for its crisp, edible leaf stalks. It requires a long, cool growing season and consistent moisture to thrive.

Uses: Celery stalks are a popular low-calorie snack and a base ingredient in many cuisines, such as the French mirepoix (with onions and carrots) and the Cajun "holy trinity" (with bell peppers and onions). The seeds are used as a spice or for extracting essential oil. 

Care and Requirements

• Temperature: Celery thrives in cool conditions, ideally between 60° to 75°F (15° to 24°C). Avoid placing pots near heating vents or drafty windows.
• Light: The plant requires at least 6 to 8 hours of direct sunlight daily. A south-facing window works well, but a fluorescent or LED grow light placed a few inches above the seedlings for 16 hours a day is often necessary for optimal growth indoors.
• Watering: Celery needs consistent and ample moisture; the soil should be kept evenly moist but never waterlogged. Inconsistent watering can lead to tough or bitter stalks.
• Soil: Use a high-quality, well-draining potting mix rich in organic matter like compost or aged manure. Celery is a "heavy feeder" and benefits from frequent fertilization.
• Container: Choose a pot at least 8 inches (20 cm) deep and wide, preferably made of plastic to help retain moisture, and ensure it has drainage holes.
